e a t : spicy pimento cheese omelet.


Lucky for me, I am married to a chef. Lucky for you, he agreed to share this recipe.



Knowing, as I do, that my wife loves spicy pimento cheese, and having, as we did, a surplus of said dairy product, I made the above and below delicacy for her the other day, and have generously agreed to share the miracle I worked with all of you. YOU'RE WELCOME!

So, get together:
1 tbs butter
1/4 cup of onion, sliced very finely
1/4 tsp minced garlic
2 eggs, beaten
1/4-1/3 cup of your favorite pimento cheese
1 tsp finely chopped jalapeño 
As much of your favorite hot sauce as you deem necessary to give you that burn-so-good
Salt and pepper, to taste

Here's what I did: Set a burner to about 40% power, and get a skillet warming on it. Throw that butter in there, along with them onions and garlic and let 'em brown. When the onions are caramelized to your liking, pour your beaten eggs on top of them (don't let the garlic burn!). Now, normally, I would set the burner a little hotter for an omelet, but the consistency of the pimento cheese makes it difficult to put on an egg that's not mostly cooked. So, keep the temperature a bit low, and don't move the egg or add the cheese until the egg is mostly cooked on top. While you're waiting, mix the jalapeño and hot sauce into the pimento cheese. When the egg looks pretty stiff, flip it, immediately spread the pimento cheese (you may have to sort of dollop it) over the top surface, and fold it. I gave it about 1 minute on each side to let the cheese melt completely, and topped it with some freshly cracked salt and pepper.

So good, it made Bek's eyes water.

  3. Having a husband with culinary creativity is SO AWESOME. Mine works in the kitchen at The Cheesecake Factory and you'd think he'd be tired of standing around in the kitchen by the time he gets off work but it's really common for the two of us to spend our nights in the kitchen together as well.

    Just the other night he made pancake-batter apple-sausage corndogs for my sister and my friends when we were hanging out at the house. I keep telling him we need to own a food truck.
